Last Night...

...My name is Donna and I love Celebrity Apprentice...there I said it.  For last nights premiere I made our favorite chocolate chip cookies...with a twist...I was all out of butter (I wasted it on my birthday cake fiasco)...So what's a girl to do?  I found this recipe for chocolate chip cookies made with oil...I was a little nervous about how they would taste...but to my surprise they were good...better than good...They were chewy and the chocolate chips remained in tacked...You don't want to know how many I ate last night with a glass of wine while watching Celebrity Apprentice...Go ahead, make them...it was easy.

Chocolate Chip Cookies Made With Oil

1 1/2 cups all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup granulated sugar
1/2 cup packed light brown sugar
1/2 cup vegetable oil
1 large egg
1 teaspoon vanilla
1 1/2 cups chocolate chips (more chocolate to compensate for the missing butter!)
(I used milk chocolate instead of the usual semi-sweet)

Preheat oven to 350 degrees F.

Stir together flour, soda and salt. Set aside.

Whisk together both types of sugar, oil, egg and vanilla. Add flour mixture to oil mixture and stir just until blended. Stir in chocolate chips

Using a tablespoon measure, scoop up dough and shape into tight rounds of about ¾ to 1 inch. Space them about 2 inches apart on two ungreased cookie sheets. The mounds should be bursting with chips. Bake for 8-10 minutes. Cool for 2 minutes on cookie sheet, then transfer to a wire rack to continue cooling.

Makes about 2 dozen

*Using a tablespoon as a scooper was a great idea, and if the dough starts sticking, just spray it with some PAM

  1. Ah never thought of using oil. Thanks for this.
And I love C.A. as well. It's going to be a doozy. Richard Hatch is a hotmess and will stick around just for drama. Trump has a really nutty cast this season.

  2. I know...I knew Richard Hatch wasn't going home...but, why did they put Dionne on the cash register? LOL. That's like putting my grandma in charge of credit cards...too funny....and why did everyone go together in one van instead of splitting up to deliver the pizza's?

  4. This show had me hysterical all night! The top moments:

Donald to David Cassidy: :How do you feel about Richard being mean to you? I mean you used to be a BIG STAR!" <--OUCH!!!

Richard to David Cassidy: "I didn't think I pushed him, but maybe I did, he's a little guy..." David: "Excuse me Richard, I'm not small I weigh 140lbs!" <---Me dead on the floor from laughter!!!

Dionne Warwick and Dwight from Real Housewives from Atlanta look like twins.

I said that I wasn't going to watch it, but I couldn't help myself; I don't care for NeNe nor Star, but Gary Busey, Lil John and LaToya Jackson I couldn't pass up!!
