It's what's for dinner tonight

This is one of Mini and my favorite dinners.  Whenever I make it Mini tells me to open a restaurant.
Here's what you'll need...

chicken breast
penne pasta
can of diced tomatoes
4 cloves of garlic
olive oil
grated parmesan cheese
salt
pepper
Italian seasoning
pat of butter

This is a super easy dinner

Boil pasta in salted water as per package directions.  Do not rise when done.
Chop chicken breast into bite size pieces and brown in olive oil...about 6-7 min
Dice garlic really small and toss into pan with chicken and olive oil...saute another 2 min
Toss in a can of diced tomatoes, stir
Toss in seasonings to taste
Cover the entire sauce with grated cheese...turn it down to simmer...about 3 minutes
Drain pasta...and toss in the pan with sauce...mix it in the pan until all pasta is covered with sauce
You may need to sprinkle the past with a little more oil if it seems dry.
Sometimes we add a little mozzarella cheese to the top of the pasta dish when were really hungry. Like last night. Viola, your eating...It is so yummy! So easy!  Give it a try this weekend.  It's good with shrimp too.

  1. ok...first...I can't believe the look of your pictures. (quality and lighting is perfect...a new adjunct to your skill set...you could make pictures of fruits and veggies and frame them...)

    now...that dish looks better than the penne rustica dish at a favorite Italian place on the west coast. The penne rustica recipes I've found online have lots of ingredients.

    Definitely going to try this one.
