Mini's First Dance...

Mini is attending her first school dance today...Yeah, it's in the gym during school hours but, it's still a dance with a DJ and everything...We made Valentines Day cookies for her friends...

...this is what she wore.


Our cookie goodness...this is what we did during our snow day.

COOKIES:

1 cup shortening
1/2 cup white sugar
1/2 cup brown sugar
1/2 teaspoon vanilla
1 egg
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt

Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, cream together the shortening, white sugar and brown sugar. Beat in the egg and vanilla. Combine the flour, baking soda and salt, stir into the creamed mixture. Roll the dough into walnut sized balls. Push craft sticks into the center of each ball. Place balls, with sticks parallel to the cookie sheet, 3 inches apart onto an ungreased cookie sheet. Flatten them slightly using the bottom of a glass dipped in sugar. This is the time to decorate with sprinkles or colored sugar if you desire.

Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. When cookies are completely cool, wrap in plastic wrap and tie with a pretty ribbon.

ICING:

1 cup confectioners' sugar
2 teaspoons milk
2 teaspoons light corn syrup
1/4 teaspoon almond extract
assorted food coloring

In a small bowl, stir together confectioners' sugar and milk until smooth. Beat in corn syrup and almond extract until icing is smooth and glossy. If icing is too thick, add more corn syrup.
Divide into separate bowls, and add food colorings to each to desired intensity. Dip cookies, or paint them with a brush.

  3. Mini, sugah' you look so teenagery--LOL--and the cookies delish--hope you had a great time at the dance--tell me you didn't hold the wall up--that you got out there and danced like you never danced before---be blessed!
